I want this today. :-)Rambling Tarthttp://www.blogger.com/profile/06615148443032981296noreply@blogger.comtag:blogger.com,1999:blog-7979090978404796142.post-69494271201575831512010-10-18T03:27:19.143-07:002010-10-18T03:27:19.143-07:00Squash, leek and potato soupYou need:- 1 smaller s...<b>Squash, leek and potato soup</b><br><br>You need:<br>- 1 smaller squash<br>- 4 potatoes, peeled, diced<br>- leek (about 15 cm long), chopped<br>- 2 cloves of garlic, minced<br>- 2 tablespoons olive oil<br>- salt, pepper<br>- couple of slices of bread<br>- couple of slices of cheese<br><br>In a pot heat the olive oil and saute the leeks and garlic for about 2-3 minutes. Add the potatoes, saute them for another minute. Add 1-1,5 liters water and bring it to a boil, then add the squash as well. Season with salt and pepper and cook until all the vegetables are ready. If the soup is too thick just add more water to it. Set aside but keep it warm.<br><br>Meanwhile place the bread slices on a baking sheet, sprinkle them with olive oil and roast/toast them for about 3-5 minutes until golden brown. Then turn the slices on their other side, place the slices of cheese on top of them and roast again until the cheese starts melting.<br><br>Serve the soup with a slice of cheese toast.<br><br>(In Hungary the squash is white colour and the inside is very soft that's why we cook it only for a couple of minutes.
